Bread Machine

For Christmas Kyle's Mom got us a bread maker. It is such an amazing appliance. Literally, all you have to do is measure out all your ingredients and dump them all in at once. Three hours later the apartment smells heavenly and you have fresh bread.

I have a problem meddling with recipes so some loaves have come out better than others. Several have tasted good, but were too short and dense. My favorite so far has been a whole-wheat-cinnamon-raisin-granola bread. Whew! Kyle's was quinoa-chive.

My grandpa is famous for making tons of bread and then giving out loaves all over town. When I was home last I wrote down his recipe for Lemon Bread. Seriously, it makes the best toast ever! I halved the recipe and threw everything in the bread machine. The recipe calls for milk, I used soy milk because that is what I had on hand.


This baby turned out to be huge.
I think it is twice as tall as all the other loaves we've made.

Albert's Lemon Bread

Preheat oven t0 350 degrees.
4 tablespoons yeast
1 cup warm water
1 cup warm milk
2 eggs
1 cup sugar
1 tablespoon salt
7 cups bread flour
2 tablespoons lemon flavoring
1/4 cup melted butter

Mix together yeast, liquids, eggs, sugar, and salt. Add flour gradually, then lemon flavoring and butter. Knead until smooth. Let rise until double in size, poke down.
Make into 2-3 large loaves. Rise again and poke a few sets of holes (with a fork) in the top of the loaves. Bake at 350 degress for 30 minutes, until brown on top. (I brushed mine with melted butter half way through baking). OR get a bread machine and let it do all of the work.

  1. So envious of your bread machine! My mom had one when I was a kid and I used to love the super crusty breads she would make with it. I remember watching it churn the dough through the tiny window on top.

    And lemon anything is my favorite. Saving this recipe for later.
